portable induction cooktop and natural gas burner comparison. induction cooktop doesn’t heat the whole kitchen up as much and is more efficienct.
Induction cooktop on left, the pan gets hot “from within”, there's no actual flame below. Natural gas on the right, a lot of the heat from the flame escapes into the room vs warming the pan.

A portable induction cooktop is a relatively inexpensive alternative to a natural gas stove, but it runs much cooler and without the same type of air pollution.

I read a Consumer Reports article and a Wirecutter article and chose a Duxtop unit:

The Duxtop 9600LS is our hands-down favorite. Not only was it among the fastest to heat, but it also held remarkably steady simmer and melt temperatures, too. In fact, it was the only cooktop that excelled in all lab assessments.

My induction cooktop's surface is in the 90s right near the pan and cool to the touch right next to that. The pan itself is 300 degrees. There’s no flame, it just uses electromagnetic fields to excite the iron in the pan! PS the Beyond Burger was yummy.
